Coconut Chia Pudding
This recipe is inspired by my recent trip to Bali where they made this beautiful chia pudding. It tasted a little like a bircher muesli but without any grain. This is my re-creation of this recipe

Ingredients
1 cup coconut yoghurt (such as Bondi Coconut Yoghurt)
1 heaped tablespoon chia seeds
1 heaped tablespoon sunflower seeds
1/4 apple, grated
Cooking Instructions

In a glass container, mix the chia seeds through the coconut yoghurt.

Add sunflower seeds and grated apple, then mix well.

Place in the refrigerator for a few hours or overnight to thicken.

Enjoy on its own or topped with some fresh berries.
