Chicken and Sweet Corn Soup
Based off an old time favourite the whole family will love this soup. The corn makes it a little sweet but still with all of the gut healing properties of chicken soup.

Ingredients
1L homemade chicken stock (recipe in GAPS section)
to taste chopped chicken removed from bones in stock
2 tablespoons ghee
1 leek, finely sliced
1 large stalk celery, finely sliced
6 brussels sprouts, finely sliced
2 corn on the cob, kernels removed
1 carrot, grated
handful parsley, finely chopped
2 tablespoons coconut aminos or tamari
1 teaspoon sesame oil
1 teaspoon celtic or sea salt
Cooking Instructions

Make chicken stock according to recipe, then remove chicken meat from wings and chop.

Heat ghee in a large saucepan over medium heat.

Add leek, celery, brussels sprouts, corn, and carrot. Cook for about 5 minutes or until tender.

Add 1L of chicken stock, cover, and bring to a boil. Reduce heat and simmer for 15 minutes.

Turn off heat and add parsley, coconut aminos or tamari, sesame oil, salt, and chopped chicken.

Cover and allow to sit for 10 minutes before serving.
