Apple and Walnut Muffins

Muffins are one of my most favourite foods. I have created this grain free, dairy free, refined sugar free version to be gentle on the gut and a great source of fibre.

Apple and Walnut Muffins

Ingredients

2 ripe bananas
2 apples, peeled and cored
1/3 cup coconut flour
1/4 cup almond flour
1/2 teaspoon sea salt
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1 egg
1/4 cup macadamia oil
1/4 cup unsweetened almond milk
1/4 cup raw honey
1/4 cup sultanas (optional)
1/4 cup walnuts, roughly chopped

Cooking Instructions

Preheat oven to 180°C.

Place diced apples in a small saucepan with just enough water to cover. Gently cook for 5 minutes or until tender. Drain and allow to cool.

In a blender, combine bananas, egg, macadamia oil, almond milk, and honey. Blend for 30 seconds until smooth and combined.

Add coconut flour, almond flour, cinnamon, sea salt, and baking powder to the blender. Blend gently for another 30 seconds, scrape down the sides, and blend again for 30 seconds.

Add the cooled apples, sultanas, and walnuts to the batter and mix through with a spatula.

Spoon the batter into 6 lined muffin trays and bake for 20-25 minutes or until golden brown and cooked through.
