Chicken and corn zoodle soup

Gut healing stocks are a great way to soothe and heal an inflamed gut. Meat stocks have gelatin and collagen that are powerful ingredients to heal a sensitive gut.

Chicken and corn zoodle soup

Ingredients

Stock

1 small organic chicken, cut into pieces
1 carrot, sliced
1 stalk celery, sliced
1/2 leek, sliced
1 clove garlic
5cm piece ginger
handful chopped parsley or coriander
1 tablespoon apple cider vinegar
1 tablespoon celtic salt
1 tablespoon dried porcini mushrooms

Extras

1 large zucchini, spiralized
1 cob corn, kernels removed

Cooking Instructions

In a heavy-based saucepan, combine all stock ingredients and cover with 4-5 cups of filtered water, enough to just cover the bones.

Bring to a boil, then reduce heat and simmer for 2.5 hours.

Remove the chicken, discard the bones, and return the shredded chicken to the stock.

Add zucchini and corn, then simmer for 5-10 minutes until the vegetables are just tender.

Season with salt and pepper if necessary, then serve warm.
