Mixed Berry Chia Pudding
A quick and easy breakfast or snack idea. Enjoy on its own or layer up with coconut yoghurt, granola and extra berries. Full of fibre and just sweet enough.

Ingredients
1 cup frozen berries (preferably organic)
1/4 cup chia seeds
1/2 cup coconut water
2 teaspoons honey
squeeze lime juice
Cooking Instructions

Place frozen berries, coconut water, honey, and lime juice in a small saucepan and bring to a boil. Reduce heat and simmer for 10 minutes.

Mash the berries with a fork to break them down slightly.

Add chia seeds and mix well to combine.

Allow to sit for 5 minutes to thicken slightly.

Pour into small glasses, bowls, or jars and place in the fridge to set.

Top with coconut yoghurt, fresh berries, and granola before serving.
