Apricot Balls

I created these little gems this christmas as a sweet treat to enjoy over the festive season. They have now become a stape I keep in the freezer when I need a little something sweet without any nasties.

Apricot Balls

Ingredients

150g blanched almond meal
150g dried apricots (preservative free)
2 tablespoons coconut oil
2 tablespoons raw honey
3 tablespoons plain protein powder (optional, e.g. 'Whey More Protein')
pinch sea salt
1 cup desiccated coconut (for coating)

Cooking Instructions

Place almond meal, apricots, coconut oil, honey, and salt in a food processor.

Blend until apricots are roughly chopped and the mixture has combined into a sticky dough.

Scoop about 35g of the mixture into your hands and roll into balls ‚it should make around 11.

Roll each ball in coconut, pressing gently to coat.

Store in the freezer or fridge in a glass container. Allow to soften slightly if stored in the freezer before consuming.

Great served alongside a coffee or herbal tea.
