Basic Lamb Stock

Gut healing meat stocks are the basis of the GAPS diet. They are the food that will heal and seal your gut lining and allow your body to heal. Lamb makes a nourishing stock that is well tolerated even by the most sensitive of tummy’s. You can use the lamb shanks as a meal and drink the stock or make the lamb and stock into a nourishing soup.

Basic Lamb Stock

Ingredients

4 lamb shanks
2 heaped teaspoons celtic salt
filtered water to cover all ingredients by 2 inches (about 1L)
1/2 onion cut into wedges
2 cloves garlic
10 peppercorns
2 sprigs rosemary
a few sprigs oregano

Cooking Instructions

You will need a heavy based saucepan or dutch oven

Place lamb shanks and salt in the pot and cover by 2 inches with filtered water

Bring to boil and skim off skum from top of water. Add other ingredients, reduce heat and simmer for 4 hours

Remove shanks. Strain stock and set aside to cool

Stock should have a jelly like consistency when cooled

Lamb shanks can be used as a meal or added back to the stock to create a soup
