Ginger and lemon gummies

Gut healing gummies are a great little snack and also great for lunchboxes.

Ginger and lemon gummies

Ingredients

250ml filtered water
5cm piece ginger, sliced
1 tablespoon grass-fed gelatin
1.5 tablespoons lemon juice
1.5 tablespoons honey
small pinch salt

Cooking Instructions

Place 1/2 cup filtered water into a small saucepan with ginger slices.

Bring to a boil, then turn off heat and leave to infuse for 30 minutes.

Meanwhile, put the remaining 1/2 cup water into a small bowl and mix through the gelatin until well combined. Leave to bloom.

After the ginger water has infused, remove the ginger slices. Bring the ginger water up to medium heat and add lemon juice, honey, gelatin, and salt.

Mix well to combine, a small whisk can help.

Pour into small silicon moulds, allow to cool slightly, then place in the fridge to set.

Once set, pop out of moulds and store in an airtight container in the fridge for up to 2 weeks.
