Hemp Protein Pancakes
Filled with fibre & protein, these light and fluffy pancakes hit the spot without sending your blood sugars sky high.

Ingredients

1 tablespoon hemp protein powder
1 tablespoon flax meal
1 tablespoon psyllium husks
1/4 cup unsweetened almond milk
1 egg
1/2 teaspoon baking powder
pinch sea salt
1/2 tablespoon olive oil
Toppings
to serve mixed berries
to serve coconut yoghurt
to taste drizzle of maple syrup
sprinkle mixed seeds
Cooking Instructions

Combine hemp protein powder, flaxmeal, psyllium husks, baking powder, and sea salt in a small mixing bowl. Whisk well to combine.

Add egg and almond milk, then whisk to form a smooth batter. Allow to sit for 5 minutes to thicken.

Heat olive oil in a frying pan and pour in the batter to make 2 pancakes.

Once golden brown on the bottom, flip the pancakes. Cover the pan and cook for a couple of minutes to puff up and cook through.

Serve topped with mixed berries, seeds, coconut yoghurt, and a drizzle of maple syrup.
