Nutty chocolate dates

Some days you may feel like a little sweet treat to have in between meals. These dates are filled with a nut butter of your choice and a clean chocolate topping without any nasties. If you don't digest nuts very well I would try an activated or sprouted spread inside your dates.

Nutty chocolate dates

Ingredients

8 medjool dates
8 teaspoons nut butter (such as sprouted ABC spread)
1/4 cup organic coconut oil
1/4 cup dutch cocoa
2 tablespoons raw honey
1 tablespoon boiling water
1 tablespoon desiccated coconut, chopped nuts or seeds (for topping)
to taste sea salt

Cooking Instructions

Melt coconut oil and honey in a small saucepan until just melted. Allow to cool for 5 minutes.

Whisk in cocoa and a pinch of salt until smooth to make the chocolate.

Cut each date along one side and remove the seed.

Fill each date with a spoonful of nut butter and close the date around the filling.

Place filled dates on a tray lined with baking paper and freeze for 30 minutes.

Pour about 1 tablespoon of chocolate over each date, then top with a grind of salt and a sprinkle of coconut or desired topping.

Store any leftover chocolate in a glass container in the freezer for up to 3 months.

Allow the chocolate dates to set in the fridge, then transfer to a glass storage container. Store in the fridge or freezer.
